Well, I'm not working so I get my birthday off. It would be a good idea for all the birthdays to be a paid holiday, though. I love spinach salads with fresh balsamic vineger and oil.

I discovered Balsamic vinegar this year. I like it on salads, but I also like to do marinated vegetables. If you throw frozen veggies in the vinegar they end up "pickled" very quickly and are a tasty treat.
I have your birthday off, but I do not have my birthday off. I will be with a really nice person, but she is memory impaired and will not remember my birthday. She is doing well to remember ordinary things. She is a wonderful person though so maybe that is the best way to spend my day.

Yes I don't see why birthdays couldn't be holidays! It's not as if everyone has a birthday on the same day!
Spinach cake....I could probably eat it LOL! I like spinach any way -cooked or raw or added to things...etc.
But I am not very good with pickled and vinegary things. I can eat a little bit, then my mouth refuses to eat any more! I like things better pickled in brine, like Sauerkraut. Though Chutneys are nice, and there was a sweet cucumber pickle once which I liked.
Because of the time-zone thing I bet I wish you happy birthday on Tuesday Catherine! haha

I always login early thinking I will do the Forum Christmas message and the rest od you beat me to it. That is why the first official Forum post was made at about 4am my time. I knew if I went to bed, when I got up someone else would have beaten me to it. All the hours I sat up, I felt I deserved to post the first message.
I like the balsamic pickled veggies. I bet I would like veggies in brine. I like feta cheese and it comes in brine. I have tarragon wine vinegar and it is nice with veggies and it makes a good marinade. I added fresh tarragon to a bottle of white wine vinegar. It is more delicate that the balsamic, but quite tasty.
How about spinach cheese cake? It could have cheddar and herbs instead of sugar. I bet it would taste really good.
Actually spinach/cheese chowder would be good. I should try that. It is cold enough for soup right now.
We do love our food don't we.
