I know that most counties in Wales choose an animal or bird as an emblem.
Here in Powys we have the Red Kite or Barcud Coch as we call them in Welsh.
Catherine, Common Buzzards are just that, very common. The Red Kite is less so but making a good come back. At one point they were only found in the North of Scotland and in the Welsh mountains, now they are much more wide spread.
In Scotland they have Golden Eagles and Ospreys, and generally throughout Britain we have kestrels and other small hawks.
And of course in Wales we have a national flower in the form of the Daffodil, and we also use the Leek as a national emblem as well.
The English flower is the Rose and in Scotland it's the thistle.
The Welsh Animal has to be the Red Dragon or Ddraig Goch (from Merlin's dream) which is on our flag.
I would guess that the Scottish National animal would be Nessie!!
As for England, I really don't know. The Royal standard has the Lion and the Unicorn on it. so maybe one of those, but that should be British rather than English.
